List of ideas that students can take on their own and a separate list for ideas with mentors available.

Should we just use a wiki page to list ideas? This would be the easiest option and gitlab comes with a wiki by default.

Yes, we need a wiki page. I'm not sure how to enable it, I'm new to this platform.
